Our house’s favorite strawberry cake!
A text message I received from my neighbor last week:
I asked my husband and kids to vote on several desserts I’ve been making lately: “Which of these should be the July Family Dessert Night recipe?”
This strawberry shortcake was the unanimous winner.

Everyone in our house LOVES this cake.
It’s basically a hearty bowl of fresh, cold, juicy, sweet strawberries, held together inside a sweet and savory graham cracker pie crust and topped with a cream cheese whipped cream. My mom and grandma have been making this cake for years, so it’s my turn to participate!
I’m one of those people who thinks a homemade graham cracker crust is one of the best tasting things on the entire planet Earth (like the BEST), so that’s what I use for mine! If you really want a regular pie crust, make it exactly the same, using a fully baked pie crust!
One notable thing I love about this cake: it’s the PERFECT hands-on recipe for kids to help with. I set up an assembly line for my daughters and put them to work with the berries, and then had them help me whisk and pour the filling. A+ for the kids’ participation in this one!

Happy summer! I wish you a truly happy time as you bring this cold, juicy and stunning cake to the table for your people. Best feeling ever!
