May is one of my favorite months to cook. It’s a delicious combination of spring and summer, with vegetables like asparagus, peas, fresh herbs and radishes all over the farmers market and tomatoes and zucchini on the way. Every once in a while we have a cold night or two, when a cozy bowl of asparagus soup may be in order, but we also kick off grilling season over Memorial Day weekend, which ushers in months of cookouts, picnics, and generally eating outside as often as possible.
Our most kept May dinner recipes reflect all that. lemon orzo
This one-pot lemon orzo is quickly becoming a readers’ favorite dinner and it’s also one of my new favorites. The recipe calls for peas, but you can add all kinds of green vegetables. I love using chopped asparagus or spinach, for example. I also often add chickpeas for a nice boost of protein. For those with children: My son Ollie loves this one and several readers have shared that it was a hit with their kids too!

Easy Vegetable Stir Fry
A 5-minute stir-fry sauce gives this colorful stir-fry a sweet and savory flavor. It’s no surprise that it was one of our most saved May dinner recipes, because it’s a great way to use up spring vegetables like peas, carrots, chives, and mushrooms. Asparagus or turnips would be delicious here too! Feel free to add baked tofu or tempeh for more protein and serve with rice.

Spring Pasta
This 30-minute pasta is practically mayo on the plate! It’s packed with late spring and early summer vegetables, like asparagus, summer squash, cherry tomatoes, peas, and onions. Some fresh tarragon, basil, and pecorino cheese fill this simple recipe with an unexpected depth of flavor.

Asparagus Soup
I first shared this asparagus soup recipe in 2019, and I tested and updated it again this spring. I’m in love with the updated version and I’m so happy that so many of you created (and saved) it and loved it too! It is a delicious and comforting recipe for a cool spring night. The leeks add a depth of onion flavor, and the asparagus and peas mixed in make it slightly creamy. If you want it even creamier, feel free to add a splash of heavy cream in the last few minutes of cooking.

Best Shakshuka
This Middle Eastern and North African dish is traditionally served for breakfast, but it also makes a great one-pan dinner. The eggs are poached directly in a spicy tomato and red pepper sauce. It’s filling, tasty and pretty quick. Don’t forget the pita to serve!

Caesar Wrap
Clearly, Love & Lemons readers love Caesar salad, because many of you saved these wraps as soon as I shared them this spring. They make a great packed lunch or light dinner for spring and summer, filled with creamy avocado, chickpeas, and crisp green vegetables. A homemade dressing adds that rich, spicy Caesar flavor. Choose between my traditional mayonnaise-based Caesar dressing or this creamy vegan cashew Caesar dressing!

Sesame soba noodles
Our Cooking Club Pick of the Month, this 20-Minute Noodle Salad is tossed with a light sesame dressing and features spring vegetables like avocado, radishes, and peas. It’s endlessly customizable, so feel free to make it your own. I skipped the avocado and added cucumber and chili crunch for a picnic last week. L&L readers have added basil, cilantro, mushrooms, tofu, and more!

Easy Black Bean Burger
These salty and smoky burgers are the easiest veggie burgers you can make from scratch! They come together in a bowl in less than 20 minutes and cook perfectly on the grill. I made them for a Memorial Day cookout and they will be on my barbecue menus all summer long. Serve them with homemade chipotle sauce and all the accompaniments.

This recipe is exactly what it sounds like: salad on top of pizza! I top a crispy, cheesy pizza crust with a flavorful combination of arugula, radicchio, pepperoncini, red onion, and Parmesan cheese. A red wine vinaigrette adds a nice acidity to cut through the rich crust and cheese. Fresh and fun, it’s my favorite homemade pizza to make during the spring and summer.

Falafel
A falafel wrap filled with fresh herbs, crisp vegetables, and pickled onions is one of my favorite spring dinners. I’m guessing you feel the same, judging by how many of you saved this recipe back in May! These crispy falafel balls are baked, not fried, and stuffed with parsley and cilantro for a fresh flavor. They are excellent for preparing meals. Cook a batch over the weekend and then freeze them until you’re ready to use them. Simply pop them in the air fryer or oven to reheat!
