I love this dinner so much I could cry.
OH MY GOD guys this is so good.
Crispy golden chicken, slathered in garlic butter (!!) and served on a plate of creamy tomato beans garnished with caramelized shallot and fresh basil? Come on! Come on.
It seems like a *very special occasion* but don’t be fooled. Look at my life. Look at my table. We are the furthest thing from fantasy. And yet here we are! Eating restaurant level food on a Tuesday and I LOVE IT!

I got this idea from a video I watched from Desert Island Dishes – the concept of crispy chicken and creamy beans is great. I just made a few changes using ingredients and methods that are staples in our home pantry. For example, I’m a big fan of air frying crispy chicken for weeknight dinners because = easy!
Keep in mind that crispy garlic butter chicken could be a meal. You can usually find my daughters (and I) standing by the cutting board munching on those deliciously crispy chicken strips.
And then when you put it on top of the creamy beans with shallots and throw all that beautiful basil in there? Go out. It is magnificent on a restaurant level and too good.
I also love this dinner because Bjork and I have something that feels grown-up and exciting, while our girls can opt for crispy chicken and tomato sauce with a small tasting plate of creamy beans on the side.
Is this real life? I’m not trying to be weird, but I love this food so much.
