While we love celebrating amateur cooks at Food52, a quick look at our collection of most popular recipes proves this: our community loves recipes developed by world-class chefs. So we took note and created Yes, Chef, a new video series in which talented, working chefs share their favorite techniques, ingredients, and dishes directly with you.
In the first episode of the series, we’re joined by Jeff Kim, the chef and co-owner of Nudibranch, a trendy East Village restaurant that combines Korean and Spanish flavors. The restaurant reflects Jeff’s culinary background: before opening his own place, the young chef trained at trendy New York City restaurants like Momofuku Ssäm Bar and Eleven Madison Park, as well as at El Celler de Can Roca, a three-Michelin-starred Spanish restaurant.
For this episode, Jeff prepares Soba Alla Battarga, a dish he created when the city’s Covid lockdowns kept him away from restaurants and back into his family’s kitchen. “My mom loves soba. It’s one of the things we both crave all the time,” he says in the episode.
