The kids and I have been trying cookies lately. These Pistachio Brown Butter Chocolate Chunk Cookies have taken the plunge. They are sweet and savory in every bite and have layers of flavor. A new batch doesn’t last long around here!
Brown Butter Chocolate Chunk Cookies are thick and chewy, with crispy edges and a soft center. I made a few ingredient changes to make this dessert a little healthier, but they are still a treat that we enjoy in moderation.
Brown Butter Chocolate Chunk Cookies
Salty, sweet, crunchy, chewy… you get all the flavors and textures in one bite. Instead of jaggery, here I used coconut sugar. It has a similar flavor, but coconut sugar is a less processed option and has unique caramel undertones that really enhance the cookie. I also added some collagen powder to subtly boost the protein.
Dark chocolate chunks offer a sweet and sour bite in every bite and add some healthy polyphenols, antioxidants, magnesium, and micronutrients. They are made with sea salt which offers electrolytes and a nice contrast to the sweet cookie. And the pistachio pieces are just the icing on the cake. They are also salty but give it a unique flavor.
One of the biggest differences you’ll notice is that these use browned butter instead of regular. It offers a richer, almost caramel-like depth of flavor. Brown butter is fairly easy to make, but you want to keep a close eye on it while it cooks. You want to cook it (stirring constantly!) until you notice golden brown bits and it smells fragrant. Remove it from the stove at this point or you’ll have burned butter, which doesn’t taste as good!
Tips for Making Pistachio Chocolate Chunk Saltine Cookies
I recommend using chopped chocolate bars as it is easier to find bars with 70% or more cocoa content. Bagged chocolate chunks work too. The taste of a good chocolate chunk cookie depends largely on having good quality chocolate!
When mixing the dough, be sure not to overmix the flour, as this can cause the gluten proteins to work too hard and make the cookies tough and tough. If the dough feels too soft after mixing, chill it for 15 to 20 minutes before baking to prevent it from spreading too much. For even thicker cookies, chill the dough for 30 minutes before taking it out.

These delicious chocolate chunk cookies have extra rich flavor thanks to crunchy pistachios and tasty browned butter.

Melt the butter over medium heat, stirring constantly until it foams and browns (about 4 to 5 minutes), then remove from the heat and let cool for 20 to 30 minutes.

Preheat the oven to 350°F and line a baking sheet with parchment paper.

Beat together the cooled browned butter, coconut sugar and maple syrup, then add the egg and vanilla and beat until smooth.

Add the flour (all-purpose or gluten-free 1:1), collagen if using, baking soda, and salt until combined, then add the chopped pistachios and dark chocolate.

Drop dough onto prepared baking sheet (about 2 tablespoons each), chill first for 15 to 20 minutes if dough feels soft.

Bake for 10 to 13 minutes until the edges are golden brown and the centers look slightly undercooked. Sprinkle with flaked sea salt and let cool on a rack before serving.

Shelf life and storage
I made a double batch of these to save some for later. The dough freezes well. Form into balls and freeze, then bake directly from the frozen state, adding 1 to 2 minutes to the baking time.
Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
