But I’ll tell you a secret.Baked brie is quick and easy to prepare. It’s as simple as popping a slice of cheese in the oven and baking until melted and soft… which takes 10 minutes or less!
Simple and elegant, this baked brie recipe is perfect for the holidays or any festive occasion. Give it your personal touch by playing with the garnishes on top. I love a combination of honey, toasted walnuts and fresh thyme, but cherry or fig jam, walnuts, rosemary and more would be great here too.
How to make baked brie
The first few times I baked brie, I wrapped it in puff pastry. But as I experimented with my recipe, I discovered that I actually preferred the cheese without it. It’s easier to prepare and you have more room for toppings like honey and nuts (which really make this recipe, in my opinion).
This is my preferred method for baking brie:
- Start with an 8-ounce slice of brie chilled from the refrigerator. This is my number one tip for making this recipe! If the cheese is at room temperature before you put it in the oven, it will melt while it bakes (I learned the hard way). we want it to meltand but not meltedso keep the cheese in the refrigerator while you preheat the oven to 350°F.
- Line a baking sheet with parchment paper. Parchment paper is not optional here. It will allow you to transfer the delicate baked brie from the baking sheet to a serving platter. If you prefer, you can skip the parchment and use a small baking dish that can also serve as a serving container. But if you choose this option, keep in mind that the dish will still be hot when you serve the brie. Be sure to inform guests so they don’t accidentally touch the plate.
- Bake the cold cheese on the parchment paper-lined baking sheet for 8 to 10 minutes. It will be ready when it is tender in the middle.
- Use the parchment paper to carefully transfer the brie cheese to a serving platter. Layer honey, walnuts, and thyme (or whatever garnishes you like) on top of the brie and enjoy!

Baked brie is best served hot, fresh from the oven. It stays melty and sticky for 10 to 15 minutes after baking, but beyond that, it begins to cool and harden.
What to serve with baked brie
A wheel of baked brie is not complete without toppings! I love mine with honey, toasted walnuts and fresh thyme, but other garnishes would also be great here. If you want to change things up, I recommend choosing an item from each of these categories:
- A sweet extension: Use cherry or fig jam instead of honey, or top the cheese with cranberry sauce. You could even drizzle the top crust with maple syrup!
- A nut: Toasted walnuts or pistachios are a good alternative to walnuts. Use toasted pepitas as a nut-free option, or feel free to omit them.
- A herb: Rosemary is delicious instead of thyme.
You also can’t go wrong with a pinch of flaked sea salt.
Serve with crostini, crackers, or baguette to pick up the melted cheese. I also love pairing this recipe with apple slices and grapes. They offer a delicious fresh contrast to the rich brie.

Preheat the oven to 350°F and line a baking sheet with parchment paper.
