Let’s make roasted green beans! These tender caramelized beauties roast in just 15 minutes in the oven, making them a perfect vegetarian side dish for busy weeknights. Topped with tasty garnishes like lemon zest, toasted almonds, and/or Parmesan cheese, they also fit perfectly on a holiday table.
To be totally honest, when I have fresh green beans on hand, my first instinct isn’t usually to roast them. Blanched and sautéed green beans are my typical choices. But a few weeks ago I was making a frittata for dinner. With the oven already on, I thought I might as well roast a side of green beans instead of cooking them on the stove.
Roasted green beans were quick, easy, and SO delicious. The browning from the hot oven highlights its nutty flavor. I am sharing the recipe below. Simple and fresh, it definitely joined my favorite green bean recipes. Try it the next time you need to liven up your side dish rotation. If you’re like me, you’ll love it!
How to roast green beans in the oven
My method for roasting green beans is similar to how I roast other vegetables. So good news: if you master my Roasted Brussels Sprouts or Roasted Zucchini, you’ll be able to enjoy these Roasted Green Beans too!
Start by trimming the green beans. Use a sharp knife or your hands to remove tough stems.
- Advice: To save time, buy pre-cut green beans (I like green beans) at the grocery store. You won’t have to do any cut Before putting the green beans in the oven!
Place them on a baking sheet (or sheets!) lined with parchment paper. The trick to perfect roasted green beans is to leave enough room on the baking sheet for them to brown. Arrange them in a single layer, leaving a little space around each one. If they are too full, they will vaporize with each other’s moisture as they cook. Steaming = zero browning!
If necessary, use two baking sheets instead of one. For reference, I use two large trays when roasting a pound of green beans.
season the beans with olive oil, salt and pepper.
Then, roast them in a 425°F oven. until tender and golden brown in places, 14 to 16 minutes.
- Advice: Don’t use a lower oven temperature! Roasting beans in a hot oven (425°F) means they will be golden brown and caramelized when tender. At a lower temperature, they will cook through before they start to brown.
Season to taste and serve!

Favorite Seasonings for Roasted Green Beans
I love green beans roasted and seasoned simply with olive oil, salt and pepper. To give it an intense and savory flavor, I often add them with a grated garlic clove while they are still hot from the oven.
They also combine very well with all kinds of condiments. Dress them with dressings like these:
- a splash of fresh lemon juice and/or lemon zest
- freshly grated parmesan cheese
- toasted almonds, pine nuts or sesame seeds
- fresh herbs such as parsley or tarragon
- Drizzles of a sauce such as creamy dill sauce or tahini dressing
A few of these sides will transform them from a quick weeknight side dish to one worthy of the holidays. Have fun finding a combination of ingredients you like! (My favorite is thinly sliced toasted almonds, lemon zest and Parm, as shown below.)

Preheat the oven to 425°F and line two baking sheets with parchment paper.

Divide the green beans evenly among the baking sheets. Drizzle with olive oil and sprinkle with salt and a little ground pepper. Toss to coat and spread evenly onto baking sheets. Roast for 14 to 16 minutes, or until tender and golden in places.
